Raw mackerel fillets, skin on: a blue-grey back patterned with dark wavy bars, fading to a silver belly over firm pale flesh. Cut into neat lengths and arranged on white plates, with lemon and greens alongside.

Mackerel is an oily fish — rich, savoury and quick to cook. The flesh firms up fast, so a hot pan or a short spell under the grill is all it needs. It also stands up to stronger flavours: miso, soy, ginger.
