Fresh-Frozen Mantis Shrimp Seafood

Mantis shrimp split lengthwise and opened out, each one packed with bright orange roe. The shell is ridged and segmented, pale amber over the flesh; a whole curled one sits alongside with its banded tail fan intact.

Mantis shrimp have sweet, firm meat that sits somewhere between prawn and lobster, and the roe is the richest part of it. Steam them briefly, or split and grill them.
