Fresh Royal Blue Tiger Prawns
Large raw prawns with a blue-grey, faintly banded shell and long antennae, laid out on a steel bench with lemon and rosemary. One shot is peeled back to show the translucent white flesh; another shows the same prawns after cooking, when the shell has turned a deep pink-red.
The meat is firm and sweet, and the size carries it through most cooking methods — grill, steam, poach or pan-fry. Keep the shells back for stock.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
