Premium Fresh Tender Silver Minnows
Small, slender fish, almost translucent — a pale silver sheen along the back and a faint line of dark speckling where the spine runs. They are laid out in neat rows on white plates, each one roughly the length of a finger.
The flesh is soft and delicate with almost no fishiness, which is why they are usually cooked whole and eaten whole. Dust them in flour and fry until crisp, steam them with egg, or stir them through a soup at the last moment.
